• Chicken breast all fat and skin removed
  • Spring onion
  • Garlic
  • Salt
  • Home-dried sage (picked and left to dry out)


  • 1 Cut the chicken breast into size required
  • 2 Grate spring onion and garlic cloves (use quantities to suit your own taste and amount of chicken used)
  • 3 Crumble the dried sage into mixture
  • 4 Add salt to taste to mix
  • 5 Rub the chicken breast in the mixture
  • 6 Cook on a clean griddle pan at high heat (do not use a cast-iron pan as it will stick)
  • 7 Be careful not to overcook

Serve with mash potatoes and mushrooom gravy and vegetable of your choice
