Ingredients

  • 2 large potatoes peeled
  • 2 spring onions finely chopped, green separated from white
  • 1 stock cube, vegetable or chicken to taste
  • Pinch of saffron strands (a pinch of turmeric powder can be used if you don't have saffron)
  • Pepper to taste

Method

  • 1 Put one inch of water into a large saucepan and bring to boil
  • 2 Chop potatoes into 1 inch cubes
  • 3 Add to water with green onion
  • 4 Crumble in stock cube
  • 5 Add pinch of saffron strands
  • 6 Cover saucepan, turn down heat and simmer very gently for about half an hour
  • 7 Turn off heat
  • 8 Stir in white spring onion with a fork so that potato breaks up into a rough mash and absorbs all liquid Add pepper to taste
