An easy to make, delicious and filling stew.
- 1 cup rinsed lentils
- 1/2 cup pearl barley
- 2 sticks celery chopped into slices
- 2 carrots sliced
- 1 onion chopped
- 1/4 teaspoon chilli flakes
- 1/2 teaspoon oregano
- 1/2 teaspoon ground cumin
- 6 cups chicken stock using fat free stock cubes
- 1/2 can butter beans drained
- 1 chicken breast cooked and cut into bite-sized pieces
- 1 teaspoon arrowroot and some water
- Salt and pepper to taste
Serve with baguette.
