Preserved lemon adds a subtle twist

  • Medium couscous
  • Preserved lemon copped into small pieces, pips removed
  • Chicken stock
  • Turkey breast cut into small pieces
  • Chopped leek
  • Broccoli cut into small florets
  • Chopped garlic

Method

  • 1 Put couscous in a serving bowl
  • 2 Mix in lemon pieces
  • 3 Add vegetables and chopped garlic to boiling stock and season as required
  • 4 Allow to cook for a few minutes
  • 5 Turn off heat and add turkey to poach in the liquid
  • 6 While stock is cooking, microwave couscous for one and a half minutes
  • 7 Add liquid to the couscous, stir it then add vegetables and turkey on top
  • 8 Cover and leave to stand for five minutes
