No quantities given here. The fat will be in the chicken, beans and spaghetti so keep an eye on portion size.

  • Chicken breast with skin and fat removed and cut into bite-sized pieces
  • Courgette cut into small chunks
  • Leek, thinly sliced
  • Tinned black beans in salted water
  • Spaghetti (you can used left-over spaghetti or cook a new batch)
  • Water
  • Soy sauce
  • Garlic clove, chopped
  • Fresh ginger chopped


  • 1 Add some water and soy sauce to a frying pan and bring to the boil
  • 2 Add the chopped leaks and let cook for a few minutes checking the water doesn't boil away, add more if necessary
  • 3 Add the chopped chicken and let cook for a few minutes
  • 4 Add the courgette, ginger and garlic
  • 5 When the chicken is just about cooked add the spaghetti, unrinsed black beans, and chilli sauce to taste.
  • 6 Allow the beans (and pasta if reheating) to warm through.

Serve with parsley garnish if available (not shown in picture)
